I was watching the documentary, Live to 100: Secret of the Blue Zones, on Netflix. It is extremely inspiring how the people in these Blue Zones remaining healthy, happy and active right up to their 90s and past 100.
We know the renowned Blue Zones as Okinawa, Sardinia and Ikaria (and a few more). The Okinawan diet is world-famous.
In Sardinia, they eat minestrone soup for lunch on a daily basis. It is basically a soup consisting of leftover vegetables. I think the base is garlic, onions and tomato. The rest is whatever vegetables you have.
So I decided to try my Asian minestrone-inspired soup for breakfast this morning.

I sauteed garlic and onions with minimal rice bran oil. Then I added carrot, tomato, cauliflower and boiled it into a soup. Before serving, I added pumpkin tofu, spinach and green peas. There’s supposed to be beans in the classic minestrone soup, but I didn’t have any this morning. I also added organic seasoning and sprinkled some oregano and a dash of pepper.
Voila! I liked it! I’ll be making this often as it’s so easy and there is no carbs. I just bought more ingredients to add to it: soya beans, celery, pumpkin, etc.
