Happy Meatless Sunday

Any day is a good day to have a meatless meal!

I’ve been making my own version of Asian-inspired minestrone soup lately. Minestrone soup is a staple diet of the Sardinia people, one of the Blue Zone communities.

The base is sauteed garlic with oil and tomatoes. Then, just add in whatever vegetables you like or have left over. The Italian version will surely have sauteed onions too, but that gives me gas, so I omit that. You can add it in for the aroma and taste.

Today’s has tomatoes, purple sweet potato (a staple of the Okinawan diet), turnip, pumpkin and leek. (Next to it, is Indy’s steamed pumpkin.)

And later, before eating it, I’m going to add in old broccoli, old French beans, fresh green peas and fresh spinach.

It’s going to be a very veggie soup!!
