A vegetarian rice meal in 15 minutes flat

It is a wellknown fact that I’m super-lazy when it comes to cooking, so let me share with you how I made this rice meal in 15 minutes flat just now.

It was at Berjaya Founder’s Day that we chanced upon the Jing-Si instant rice sold by Tzu Chi Foundation. I bought two bags (each bag has 5 packs of meals) and it was so easy to prepare and nutritious too, so much so that it was excellent for Ming-Yi to take to work. I’ll see if the two pilots want to take it to work as well.

When we buy from Tzu Chi, we are supporting their compassionate work too, so that’s a good thing.

All you need is hot water (preferably boiling), a container with a cover and 20 minutes of patience.

So yesterday, we went to the nearest Jing-Si book cafe to buy more.

The person-in-charge said Tzu Chi will be absorbing the GST on this product since it’s rice. Oh wow….*folds palms*.

I’m sure being plain lazy does not constitute a “disaster”, but it works…

So I’m lazy, but not THAT lazy and since I only work this afternoon, I thought of preparing it using the second method today. Here’s my lazy-lunch:

Chopped pumpkin, cabbage, shitake mushrooms, parsley, spring onions – stirred fried with coconut oil (no GST!) and added some water for the gravy. Done in a few minutes.

Pour in the instant rice, the seasoning and the vegetables (in this case, the azuki beans). Add water, stir well and let it boil.

After it comes to a boil, turn off the flame and keep it covered for 5 minutes.

Tadahh! Steamed brown rice with azuki beans. This is already a meal by itself, actually.

Sure beats steaming rice for 45 minutes….

My grandma drilled it into us young ‘uns way back that we must not waste even a grain of rice because “children in Africa have no food to eat”. True fifty years ago, and sadly, may still be true even now.

catsGrandma will be pleased to know that I have passed her legacy down to my cats. Heidi laps up everyone’s bowl at the patio and Bunny does it at the pantry.

Not a grain wasted.
